You only get one turn at this?

I deployed 25 troops on a planet. I used an Echelon style (whatever that means), and they all fought bravely. I only lost a few soldiers. But after that, they're lost? The troop phase doesn't happen again. What happens to the troops? They just dissapear? We abandon them?

Wether you won or not:

If you won your troops are stationed on the planet as a garrsion, you will see it uner the military tab, you can disband them and send them back to the reserves by using the 'Disband' button.

If you didn't win the planet you most probably did not succeed in capturing a single region. Your men were pushed back and were unable to capture any ground, and are now on their way back to your empire (delay box). For the first turn of invasion you often want to use a bit more aggressive attack, ruse or vertical evelopment are my personal favorites.

Surprise attack also seems to work nicely ;)

So how do you set up multiple landing areas, and how do you choose which planet to attack?

When you attack, all available troop transports in orbit land their troops (max 10 Taskforces active - if you have 8 LR taskforces active and 6 transports taskforces, 2 of those transport taskforces will attempt the landing). They attempt to establish a secure area - if none of the planet regions are captured they fail in that effort and are driven offworld; the force that attempted the landing limps back home on their damaged transports for repair and medical aid - they will appear some 7-15 turns later, ready once again for youyr orders.

You may attempt to land more troops the next turn, if you have more transports in system or more transports incoming.

If, on the other hand, they manage to advance their position and gain a foothold (capture one or more regions), their transport ships return home (appearing again for use some 7-15 turns later) and you may land more troops the next cycle ('attack planet' again to get the option to land troops) and have them reinforce the forces planetside.

Edit: You can select which planet to attack; after you have selected 'attack planet' but before you hit 'commit' look at the bottom of the screen. There is a button down there that will allow you to look at the system map as well as examine and select the target planet.
