The answer of the first theme park rather depends upon who you ask.
The Knott's Berry Farm web site claims Knott's was the first theme park, coming from the ghost town that Walter Knott built in 1940 to entertain guests who were waiting to eat at his wife's chicken restaurant. Admission was not charged until 1968, however, when the park officially became an amusement park.
Meanwhile, Holiday World claims theirs was the first theme park, opening in 1946 as Santa Claus Land.
Amusement parks, however, date back quite a bit farther. The oldest continuously-operating amusement park in the United States is Lake Compounce, which dates back to 1846. Cedar Point is second, dating to 1870.
Located in Copenhagen, Denmark, Bakken claims to be the oldest operating amusement park in the world, dating back to 1583. (The information about Bakken is according to Wikipedia, which should be taken with a grain of salt -- the article is definitely wrong in certain items. It claims that the first permanent park in North America opened in 1895, but Cedar Point was already 25 years old by that time.)

I guess the first coaster-building company could be the LA Marcus Thompson Company, who build switchback coasters and scenic railways from the 1880s until the 1920s I believe.
Original coasters were 50ft or less. It took until 1927 before the first coaster higher than 100ft was built.
