Okay, so from what I remember, CFR's can't have more than 30 meshes, right? But I've noticed the Ferris Wheel in Wild has all those gondolas, the wheel, and the supports. I've counted and it seems to be over 30. And I remember that Frontier had this same constraint.
How did they overcome it?

It's not a CFR constraint, it's a general 3D model constraint in RCT3.
The reason why the ferris wheel works is that it has less than 31 meshes (11 to be exact). In RCT3, the entity that is assigned to a bone is a vertex. The published version of the importer cannot do that, as it is not easy to provide a sensible interface for assignment.
The next version of the Importer (or rather the model engine in it, which applies to ovlmake as well) due soon will alleviate that to some extent. All meshes with the same settings (except for the bone assignment) will be merged on export.
With modxml files even more is (or rather will be) possible, but I'm actually not sure if that would work with the ovlcompiler syntax. But if you go that far in Blender, the ovlcompiler syntax is really no longer useful.
Well that's interesting, because I think this would allow many flatrides as you often have more than 30 'cars' and restraints but these could all have the same settings.

yeah true^
a lot of modern flatrides can be made... we got modern version already, but most of the flatrides are based on 16 "cars" dropped on a platform
